People have a myth that it is so time consuming to cook a good South Indian-style seafood. The fact of the matter is, it is not so.
I have seen some of the quickest and most delicious seafood meals cooked in less than an hour - and even TV shows. The secret? Minimal ingredients, fresh seafood and a few helpful tips.
In this case, I am sharing 3 easy recipes of South Indian seafood which can be prepared within 20 minutes. They are excellent on weekdays, weekends or even when the guests come by.
1. Meen Varuval (Fry Fish) / Quick Meen Varuval

It is Traditional food in Fishing community. Crispy on the outside, juicy from end to end — and in minutes. Nenu koduku chandamma to travis/toma 4-5 machli (seer fish/vanjaram athava recuer breeding method)

Ingredients:
  • 1 tsp red chilli powder.
  • ½ tsp turmeric powder
  • 1 tsp ginger-garlic paste
  • Salt as needed
  • Few curry leaves
  • 2 tbsp oil
How to make: Put in a bowl Chilli powder, turmeric kada, ginger garlic paste and salt.  Apply the paste on fish fillet spreads.  If you have time rest for 10 minutes. Otherwise, you can start to cook it now.  In your skillet, heat the oil and throw in the curry leaves. Fry the fish on medium heat for 3–4 minutes per side.
Why it’s quick: No grinding, no complicated steps. Just marinate and fry. 
Tip: Use a flat bottom pan so that every pieces cook evenly and gets that nice crisp.

2. Prawn Masala (15-Minute)

This is one dish I prepare, when I need something zinger yet do not like to spend too much time in the kitchen. This recipe is perfect because prawns cook so quickly.

Ingredients:
  • 250g prawns (cleaned)
  • 1 onion (finely chopped)
  • 1 tomato (chopped)
  • 1 tsp ginger-garlic paste
  • 1 tsp chilli powder
  • 1 tsp coriander powder
  • ½ tsp turmeric
  • Curry leaves
  • 2 tbsp oil
  • Salt as needed
How to make: Add curry leaves in heat oil in a pan. Add onion and fry it soft and colourish. Add Ginger-garlic paste with colourish onion and cook 1 min. Add tomatoes and cook to soft and come out masala. Add all spice powders and mix. Add prawns then cook up to 5-7 mins. And there it is-your prawn masala is ready!
why it’s quick: This whole dish is prepared in a short time due to the speed of cooking prawns.
Tip: Do not overcook prawns.

3. Fish Curry

Do you think Fish Curry takes long? This is a really quick and easy version, full of flavour.

Ingredients:
  • 4–5 fish pieces
  • 1 small onion (chopped)
  • 1 tomato (chopped)
  • 1 tbsp tamarind water
  • ½ tsp turmeric
  • 1 tsp chilli powder
  • 1 tsp coriander powder
  • 1 tbsp oil
  • Curry leaves
  • Salt as needed
How to make: Takes oil in a kadai and put curry leaves. Add onion and cook until transparent. Add tomatoes to cook gently. Add pinch of turmeric, 1/2 tsp of chilli powder and 1/2 tsp of coriander powder. Mix well. Add the tamarind water and then add a little plain water. Bring to a boil. Place the fish pieces carefully in and allow to cook for 6–8 minutes. And there you have your Simple Fish Curry.
Why it’s quick: No coconut grinding, no fancy masala—just simple pantry ingredients.
Tip: ensure to place the fish on low flame as soon as it is added into the curry, otherwise it will break.

Tips to Cook Faster:-

Clean seafood before cooking. This saves you time when you are cooking. You will be glad you did that. Keep spices ready. I have added chilli powder, turmeric powder and coriander powder on hand. These spices are need, for seafood. Use a flame to cook. This helps your food cook evenly. Your Seafood is cooked properly. Don't put much food in the pan at once especially when frying fish.
